- Cut the potatoes into wedges or strips. Place them in a bowl of cold water for 30 minutes to remove any surface starch (this helps the fries cook more evenly and prevents them from burning too quickly).
2. After 30 minutes, drain the potatoes and transfer them to a fresh bowl of cold water. Place the bowl in the fridge and let them soak overnight for a minimum of 12 hours.
3. After resting overnight, remove the fries from the water, place them on paper towels, and pat them dry thoroughly.
4. Heat your Olitalia Frienn High Oleic Sunflower Oil to 275°F. Add the fries and cook for about 5 minutes, stirring and flipping occasionally to ensure even cooking.
5. After 5 minutes, remove the fries from the oil and place them on paper towels. Allow them to cool completely.
6. Reheat the Olitalia Frienn High Oleic Sunflower Oil to 350°F. Add the fries back to the fryer and cook for 5–7 minutes, or until golden and crispy.
7. Remove the fries, pat them dry if needed, season with salt, and serve with your favorite condiment.
