Lemon Mint Pea Pesto
Bright and herby, this lemon mint pea pesto brings a burst of sunshine to any dish.

Ingredients

  • 2 cups frozen peas, thawed
  • 3/4 cup Olitalia TuttOlio
  • 3 garlic cloves
  • The juice from 1 1/2 lemons
  • 6 sprigs mint leaves
  • 1oz pecorino Romano
  • Salt and pepper, to taste

Instructions

  1. Add the peas, garlic, mint leaves, and lemon juice to a food processor and puree until all ingredients are well incorporated, about 10-15 seconds.

2. Add in the pecorino Romano, salt, and pepper, and puree for another 10 seconds.

3. Lastly, with the machine on, slowly drizzle in the Olitalia TuttOlio and blend until well incorporated.

4. Serve and enjoy!
