Ingredients

  • 1 kg Nuvola Super - 2.2 Lbs
  • 100 g Sugar - 3.5 Lbs
  • 40 g Fresh Yeast - 1.4 oz
  • 25 g Salt - 0.9 oz
  • 350 g Butter - 12.3 oz
  • 100 g Sugar - 3.5 oz
  • 1400 g eggs - 3 Lbs

Rum Syrup

  • 1 Lit Water - 2.2 Lbs
  • 500 g Sugar - 17.6 oz
  • 50 g Rum - 1.7 oz

Instructions

  • Add the ingredients in the planetary mixer except salt and butter
  • Add the salt
  • When the dough detaches from the walls of the bowl, then add the eggs a few at a time
  • Add the butter before adding the last 3 eggs
  • Bake the small Babbas at 350F and the large ones at 375F
