Urban Bricks Neapolitan Pizza

Ingredients

  • 25 Kg - Flour - 55 Lbs (100%)
  • 16.25 Liters - Water - 35.8 Lbs (65%)
  • 40 g - Yeast (fresh) - 1.4 oz (0.16%)
  • 750 g - Salt - 26.5 oz (3%)

Instructions

  • Place water in mixer bowl and melt the yeast
  • Then add the flour
  • After 2 min add the salt
  • Mix for MAXIMUM of 15 min on slowest speed
  • Put on counter and break into 7.87 lb balls
  • Cut dough into oiled metal dish to cut into equal pieces
  • Place pre portioned dough into green roller board
  • After this has been balled make sure each ball has been sealed before placing into dough trays to proof
  • Let the dough trays sit a room temperature for MAXIMUM 2 hours
  • Place in cooler for use the next day
  • Pull the dough trays 1-2 hours prior to using
