Ingredients

  • 25 Kg - Flour - 55 Lbs (100%)
  • 14 L -Water - 30.8 Lbs (56%)
  • 25 g - Yeast (dry) - 0.8 oz (0.1%)
  • 500 g - Olive Oil - 17.6 oz (2%)
  • 500 g - Salt - 17.6 oz (2%)

Instructions

  • Place water in mixer bowl and melt the yeast
  • Then add 50% of the flour at slow speed
  • After 2 min add the salt and the rest of the water
  • After 10 min add the Olive oil (slowly)
  • Mix until the dough will be nice and smooth
  • Total mixing time should be 15 min
  • Place the dough on the table and let rest for 30 min
  • Divide in the desire size
  • Place the dough balls in trays
  • Let ferment at room temperature for 1-1.5h
  • Store in the blast freezer
  • Remore the dough from the freezer and place in the fridge for 24h
  • Before use the dough bring at room temp for min 2 hours.
